2. Batutay Longganisa
Longganisa was really made from pork. But in case of the batutay, it is not. Batutay, or Bototay to others, is a type of longganisa which uses beef in the procedure, rather than the use of pork. That is why it is known as Beef longganisa.
The recipe of batutay was originally formulated and made by Mrs. Dorothea Lajares. It has a distinctive characteristic in the midst of the other. The sweetness of the beef longganisa made it stand-out amongst the other longganisa, especially those which also have a sweet taste. In addition to it is that it is prepared using beef meat.
It is prepared using garlic, beef meat, pepper, salt, soy sauce, salt, pork-isaw, and sugar. 80% of the Batutay is meat, while the remaining percentage is fats, which is to allow frying.
These Batutays are known in the other provinces and are bought by consumers from different points of the country.
